Pizza is the most global local dish in the world. I'm not sure whether it actually originated in Napoli, Italy as is often claimed; but every country and city has now adopted pizzas and made it their own by having their own unique version. In India, the same can be said of dosas. This simple and delicious rice and gram flour crepe has been endlessly modified and every state and region has its own favourite version. This Erra Karam Dosa hails from Nellore in Andhra Pradesh. A liberal smearing of fiery red chutney made with onions, garlic, red chillies and tomatoes (the Erra Karam) and a sprinkling of roasted split gram powder (the Pappulapodi) give this dosa unique flavours and textures. And no, it's not quite the same as the Mysore dosas that many of us are familiar with, its so much better !.
