Today, we are making trileçe, which is a spongy cake wetted with milk and cream and top with dulce de leche🤤🤤. This cake is born in South America and came to Turkey through Balkans with the help of soap operas. They would do great as well) • 1 L milk • 125 g brown sugar, 6 tablespoons • 125 g sugar, 6 tablespoons • ½ teaspoon baking soda • For the cake, (you can use store bought sponge as well.) • 6 eggs, room temperature • 300 g powdered sugar • 400 g all-purpose flour, • 1 pack of baking powder, 10 g • 1 teaspoon butter, for greasing • A pinch of salt • For the milk mixture, • 125 g sugar • 1,7 L milk • 400 ml cream, %35 fat • • • To make the dulce de leche, coat the bottom of a pot with water to prevent milk to stick. Pour the milk in the pot. Add in the brown sugar and sugar. • • Turn the heat on and bring to boil, stirring occasionally. • • When the milk boils, add in the baking soda. Be careful, It is going to rise after adding baking soda. • • Transfer the pot on a small burner and continue to simmer on low heat. • • Collect the foam on top and wipe the sides of the pot with a wet cheesecloth or napkin. It will prevent the burning of small parts left on the sides. Wipe the sides in every half an hour. • • Simmer until caramelized and thickened about two hours, stir more often on last hour to avoid burning and collect foam if there is any on top. • • You can check the consistency by pouring a spoon of it on a cold plate. The consistency will be the same when the dulce de leche cooldown. • • Transfer to a jar to cool, makes about 1½ cups. • • To make the cake, preheat the oven to 200 C (390 F) on upper and lower heat. Adjust the rack from the second shelf from bottom. • • Separate the white and yolks of the eggs. Take the whites in a bowl and add a pinch of salt. Start to beat with an electric mixer until egg white are foamy, then gradually add in the powdered sugar- 1 tablespoon sugar every 15 seconds-. Beat until soft peaks form. • • Then add in the egg yolks one by one and continue beating on low speed. • • Add in the baking soda and give it a last mix. • • Sieve the flour on mixture in 5-6 parts and fold it carefully from bottom to top and on the same direction. Do not over mix. • • Grease gently a 24x32 cm tray (9 x12 in) with the butter. • • Pour the cake batter on the tray and spread evenly with a wet spatula. Because it is a thick batter wetting your spatula makes it easier. Hit the tray 4-5 times to your counter and let the mixture sit for a couple of minutes. • • Place the tray on the second rack from the bottom (this way cake can bake on the middle) and bake for 20 minutes until a knife comes out clean when inserted into the cake. You can bake up to 30 minutes if the knife doesn’t come out clean. • • To make the milk mixture, again rinse the bottom of the pot with water to avoid milk to stick. Pour around 1 cup of the milk in the pot and add in the sugar. Dissolve the sugar on medium heat. After sugar dissolved, add in the rest of the milk and the cream, and stir. • • After the cake is baked, let it cool to room temperature. Take out the cake and cut the sides around 1 cm to make it a perfect rectangular. You can dip the pieces in milk or tea and they are great just like that. • • Then cut the cake into 12 equal squares. Then place them back into tray. Pour the milk mixture on the cake, letting every slice gets its share from the milk. Let it soak all the milk mixture and cools in refrigerator around 2 hours. • • Spread the dulce de leche on top and trileçe is ready to serve.
