Ube “Doctored” Cake Mix: • 2 packs of white cake mix (Betty Crocker) • 1 pack of Jell-o Vanilla Pudding Mix • 2 cups of canola/vegetable oil • 1 cup of milk • 8 large eggs • 1.5 cups of sour cream • 3 tbsp Ube powder • 2 tsp Ube extract • Preheat the oven and prepare the pans: Preheat your oven to 350°F (175°C). Grease and flour your cake pans or line them with parchment paper. To reduce doming, wrap the outside of the pans with damp cake strips or prepare a water bath (see step 5). • Mix the dry ingredients: In a large mixing bowl, combine the 2 packs of white cake mix, Jell-o vanilla pudding mix, and 3 tablespoons of ube powder. Stir until evenly mixed. • Add the wet ingredients: In the same bowl, add the eggs, oil, milk, sour cream, and 2 teaspoons of ube extract. Mix on low speed until everything is just combined, then increase the speed to medium and beat for 2-3 minutes until the batter is smooth and well-incorporated. • Pour the batter: Divide the batter evenly between your prepared cake pans. Tap the pans gently on the counter to release any air bubbles and even the top of the batter with an offset spatula. • Prepare the water bath: Place your filled cake pans inside a larger baking pan. Carefully add hot water to the larger pan, ensuring that it reaches about halfway up the sides of your cake pans. This water bath will help the cakes bake more evenly and reduce doming. • Bake the cakes: Bake in the preheated oven for 50 minutes, or until a toothpick inserted into the center comes out clean. • Cool the cakes: Remove the pans from the oven and the water bath. Let the cakes cool in their pans for about 10 minutes, then transfer them to a wire rack to cool completely before frosting or serving. I like to chill mine in the fridge to make sure they don’t melt the frosting. • Coconut Ermine Frosting Recipe: • 4 tbsp cornstarch • 4 tablespoons all-purpose flour • 1 tsp salt • 1 1/2 cup white sugar • 400 ml coconut milk • 400g unsalted butter • Cook the base: Sift the dry ingredients into a medium saucepan, then whisk together. Gradually add the coconut milk, stirring constantly until the mixture is smooth and free of lumps. • Thicken the mixture: Place the saucepan over medium heat, continuously stirring as it cooks. Allow the mixture to thicken into a pudding-like consistency, about 5-7 minutes. Remove from heat and let it cool completely to room temperature. • Beat the butter: In a large mixing bowl, beat the unsalted butter on medium-high speed until light and fluffy, about 5 minutes. • Combine the mixtures: Once the coconut milk mixture has cooled completely, add it to the butter mixture in small increments, beating continuously on medium speed.
