Add the eggs, one at a time, mixing well after each addition. • 3) Add half of the flour mixture, half of the sour cream, and then the remaining flour mixture, sour cream, gently fold in. Add in the lemon juice, and essence. Mix until all ingredients are well incorporated. • 4) Tansfer the batter to the oil sprayed pan. If you do not have a bundt pan you could use a regular 8 round cake tin. • Bake for 15 to 20 minuttes until a toothpick inserted in the center comes out clean. • 5) Cool completely before turning out onto a wirerack or the mini bundts can break if still warm. • 6) For the glaze, measure the powdered sugar into a bowl and stir in 1 1/2 tbsp of milk and 1 tsp of lemon juice and mix until completely smooth. Add a little more lemon juice if the glaze is too thick. • Drizzle the glaze over the cooled cake and allow to harden and set.
