First Dough With A Famag IM5S V10

Today I make the first dough in my new Famag IM5 S high hydration mixer. I use caputo nuvola at 65% hydration to make the pizza dough. The mixer is a different beast to what I am use to, so there is a bit of a learning curve especially with the spiral and the friction on the dough which can cause the dough temperature to rise.
