A puff pastry prepared with yufkas (filo or phyllo), Turkish leaves a little thicker than the pastry sheets. Today I'm giving the recipe for spinach börek. • 1. Finely chop the leek and spinach. Do not add the oil and salt just yet, just add it before pouring it over the dough. • 2.Prepare the sauce that will be used to moisten the yufka leaves. In another bowl, whisk the cold milk, oil, eggs, yogurt and baking powder with a whisk or mixer. • 3.Cut the yufka (phyllo) dough according to the size of your tray, otherwise the sides will overflow, then divide the amount of dough into two parts. • It is now enough to go to the assembly of the börek. • 4. Oil the baking sheet with a brush. • 5.Spread 1 phyllo dough on the bottom of the tray. • 6.Apply a ladle of sauce to moisten the dough, which you spread with a brush. • 7.Then add more dough and more sauce. • Repeat the same process (dough + sauce + dough + sauce ...) until the first part of yufka dough (phyllo) is used up. • 8.Once you have assembled the first part of the phyllo dough, • 9. Then sprinkle a teaspoon of salt and add oil, then mix the spinach mixture well. • 10. Spread the spinach mixture you have prepared on the dough. • 11. Continue to apply the second part of the paste (paste + sauce). Repeat the same process (dough + sauce + dough + dough ...) until the second part of the dough is exhausted. • 12. Brush the top of the dough with the rest of the sauce. • You may not have much sauce left, just add a little milk and oil to the yogurt and 1 egg, if you don't have enough. • 13.
