BBQ Chicken Kabobs

Big Poppa throws down on some Delicious BBQ covered Kabobs. • Ingredients: • Chicken Breasts - cut into 1 chunks (Bite Size) • Pineapple chunks • Diced Green Pepper • bacon - partially cooked (cut into small strips • Take the Chicken breasts or tenders and cut them into bite size portions. Then take a gallon resealable fridge baggy and place the chicken in the bag. • Next add your BBQ sauce. I used Pits N Grins BBQ Sauce for this particular recipe. It's a great sauce with lots of zest. ratios depends on how much chicken your using. I used probably a cup to a cup and a half with about 4 chicken breasts. • Let this marinate for 4- 8 hours. I sometimes leave for 24 hours depending on how much flavor i'm trying to integrate into the meat. • Once that's done take the chicken out and begin prepping the other ingredients. • Start by precooking your bacon. You want the bacon to be partially finished. Not completely cooked and still a little soft and floppy. • While the bacon's cooking cut up your pineapple or open the can, whichever you prefer. • Dice up your green pepper and place in a bowl near you. • I tend to use metal skewers, but if you're using wood remember to soak them for at least an hour before putting them on the grill. • Next I place all the food in bowls around a large pan that will hold my finished kabobs. • At this time go and light your grill. if you're using gas now is about the time you'll need to get the prefered heat. If your using charcoal, you'll probably want to hit this step well in advance of the stacking process. From here you'll begin stacking your ingredients. I normally use this method: Chicken, Pineapple, Bacon, and Green Pepper. • Once you have your skewers stacked and ready, take and pour some more of the bbq sauce into a small condiments cup or a 1/2 measuring cup. • Place the Kabobs on the grill and coat the top side with the bbq sauce that you've brought out. From here it's basically turning when you think they're ready to turn. Everyone's grills are different.
