Understanding Overproof Rum

What is overproof rum? Why do you use it and what should you be buying? There are a few great overproofs out there and some have a purpose. • Lemonhart 151 is great for tikis, Plantation O.F.T.D is also a great overproof (not as high) that has a dark rich flavor that's actually fantastic and makes your cocktails better, not just more potent. • Hamilton 151 and LemonHart are demerara rums, but we've found Hamilton doesn't replace Lemonhart 151 when used in tiki cocktails that call for it. • Don Q 151 is a great substitution for anything calling for 151. You can try Stroh 160 but it's going to add flavorful butterscotch which may not be what all cocktails need.
