How to make the best Filipino Lumpia you ask? --- Lola's Filipino Lumpia is a show stopper at our parties. It's gone in minutes and everyone loves it! LoLa's lumpier recipe is absolutely the best! I hope you all enjoy • Lucena's Famous Filipino Lumpia Recipe: • (makes about 75 pieces of small rolled lumpia) • • Ingredients: • 2 Pounds of lean ground beef • salt and pepper to taste • 1 Tablespoon soy sauce ( we prefer the Aloha brand) • 1/4 cup finely chopped onions (yellow or red) • 2 stems green onion • 1 cup thinly sliced water chestnuts • 1/2 cup cream of mushroom • 1/2 cup finely diced celery • 1/2 cup finely diced carrots • 1 tsp garlic powder • 1 egg white in a bowl • 2 packages of lumpia wrapper (you can buy ones that are already separated or thaw it and separate. Cut diagonally. • Canola or Vegetable oil for frying (not peanut or olive oil -- you have to use a frying oil for high heat) • To Prepare: • Brown the ground beef in a sauté pan and season with soy sauce, salt and pepper. Drain the fat once brown. • Add the red or yellow onions and the white part of the green onion • cook for about a minute • Add the chestnut and celery (stir) on medium heat • Add the cream of mushroom, and carrots .. stir for about 5 minutes • Add the garlic powder and turn off the heat. Add the green leaves of the green onion and stir. Place in a bowl. • Lumpia wrapper: • separate wrapper and cut diagonally. place in a flat surface. • Start at the bottom triangle part of the wrapper (leave about an inch from the bottom to fold) • Place one heaping teaspoon of meat mixture in the bottom middle. spread lengthwise a bit. fold left of triangle over mixture. fold right of triangle over mixture (creating like an envelope ). Start at bottom and tuck the 1 inch excess over the mixture creating a log shape. Then roll TIGHT till you reach the tip end of wrapper. Dip end in the egg whites to create a seal. place on a dish. --- repeat till all mixture is used. • Heat oil for frying lumpias. Don't overcrowd the lumpia while frying -- a few at a time. Patience is key to a perfect fried lumpia :-) • Only fry the lumpia until wrapper is golden light brown.
