I love Oreo cookies and have a playlist that uses them as an ingredient: http://bit.ly/24xeI2H • Cookies: • 1 cup shortening • 1 1/3 cup white granulated sugar • 2 eggs • 1 tsp vanilla • 2 1/2 cups all purpose flour • 1 tsp baking powder • 1/2 tsp salt • -Combine the flour, salt and baking powder in a bowl and set aside. • Place the 1 cup shortening in a large bowl and add the white granulated sugar. Cream the two together until light and fluffy. Blend in the vanilla and the eggs. • Add in the dry ingredients and stir until combined. • Roll out portions of dough between sheets of waxed or parchment paper to 1/8 thickness. • *NOTE* if you find the dough too soft and sticky to work with, chill it for about 30 minutes. • I you don't want to use the same method I used in the video, do the following. • Cut out circles in the rolled out dough using a cookie cutter. Place a small portion (1-2 tsp) of the cream cheese mixture in the center. • Flatten filling slightly. Place a second round circle of cut out dough over the top and press edges together with a fork to seal. • Re-roll scraps and continue until all used up. • Place cookies on a greased cookie sheet or one covered with silicone mat or parchment paper. Leave about 1.5 inches between cookies. • Bake at 350F for about 15-20 minutes until edges are light brown. • Allow to cool on cookie sheet for 10 minutes and then transfer to wire racks to cool completely. • Drizzle melted chocolate over cooled cookies. • Store in a covered container at room temperature or in the refrigerator (depending on how long you plan on keeping them). • • Filling: • 12 Oreo cookies • 1 package (8oz) of cream cheese softened (at room temperature) • 1/4 cup powdered sugar • 1/2 tsp coconut extract (or use vanilla or almond extract if you prefer) • crush the oreo cookies into fine crumbs an combine them with the powdered sugar and extract until smooth. • Drizzle: • 1 cup semi-sweet chocolate chips • 2 tsp vegetable shortening • -Melt chocolate chips and shortening together in double boiler or microwave and place in a ziplock bag with a small hole cut in the corner. • INFO ABOUT ME :) • My name is Tammy and I live in Northeastern Ontario Canada.
