Homemade Italian Pumpkin Ravioli with Amaretto Cookies

Hi everyone!! This simple recipe is a request from a subscriber, a classic ravioli filled with pumpkin and a delicate note of almond given from amaretto cookies. It's a classic recipe in north italy, seasoned with browned butter and sage. the technique of making ravioli is the classic one and you can see it in the video. As always if you like the recipe Subscribe to Gnam for more content like this : https://bit.ly/341DSMK • Like i said in the video this are the equipment I use: • Pasta Maker : https://amzn.to/2KebO2n • Ravioli Cutter: https://amzn.to/36R1Trh • Ravioli Maker Mold: https://amzn.to/3lOefqj • INGREDIENTS: • Dough: • 300 gr ( 10,58 ounce ) all-purpose flour/ oo flour • 100 gr ( 3.53 ounce )semolina flour • 4 eggs • 20 gr ( 0.71 ounce )extra virgin olive oil • Filling: • 500 gr ( 1.1 pound ) cooked pumpkin in oven • 60 gr ( 2.12 ounce ) shallot • 50 gr ( 1.76 ounce ) extra virgin olive oil • rosemary • 30 gr (1.06 ounce ) amaretto cookies • 100 gr (3.53 ounce ) parmigiano cheese • Breadcrumbs ( optional ) • Seasoning • 200 gr ( 7.05 ounce ) butter • sage • nutmeg • • Put 300 gr all-purpose flour and 100 gr semolina flour on a pastry board making a hole in the center where we will put 4 whole eggs and 20 gr extra virgin olive oil. • With a fork we amalgamate the eggs and let the flour be incorporated, we salt the dough and continue this operation until it will be possible to work it by hand. • We work the dough until it is smooth and even. Leave it to rest in a film in the fridge for 30 minutes at least. • In a pan put 50 gr extra virgin olive oil, 60 gr finely chopped shallot and a sprig of rosemary • when is browned add 500 gr pumpkin ( to make this operation faster you can cook the pumpkin in oven at 180 gr for 30 minutes with a little oil and salt ) • cook for 10 minutes ( if the pumpkin is been already cooked in the oven ) and remove the sprig of rosemary • let the pumpkin cool • • chop finely 30 gr amaretto cookies ( you can add or remove some amaretto if you like a more stronger or softer taste of amaretto ) • in a mixing bowl put the cooled pumpkin and 100 gr parmigiano cheese. Add the chopped amaretto and mix well, if the mixture is too soft ( it depends on the quality of the pumpkin ) add an handful of breadcrumbs • Let it rest for 30 minutes • • work the dough with a rolling pin and divide in several part • now with the help of a pasta machine begin to lower the thickness of the dough • the dough will be ready when it is one millimeter thick or a little more • now there are several way to make ravioli • you can take a ravioli maker cutter or a glass, the procedure is always the same, take a leaf of dough put a teaspoon of filling cover with another leaf of dough and cut pressing well • Otherwise i usually use a ravioli molding tray to make several at the time, • the procedure is pretty simple. • Spark a little of flour on the molding tray, put a leaf of dough on it, press gently the recesses of the mold, put a teaspoon of filling for every recesses, cover with another leaf of dough, press on the molding tray with a rolling pin • it's pretty easy with some try. I put in the description the links on the cutter, molding tray and pasta machine that i usually use. • in a sauce pan put 200 gr butter and 4/5 leaf of sage. Add a sprinkle of nutmeg • when the butter begins to turn hazel turn off the fire • • Put a large pot with abundant water on the fire, add salt ( normally 10 gr - 0.35 ounce for 1 liter - 0.26 gallon) and bring to boiling point. • Add the ravioli in batch stirring gently.
