Ingredients: • 500 grams squid, cleaned and cut into rings • 1/2 cup grated coconut • 1 medium onion, finely chopped • 2 green chilies, sliced • 1/2 teaspoon turmeric powder • 1/2 teaspoon red chili powder • 1/2 teaspoon black pepper powder (optional, for extra spice) • 2 tablespoons coconut oil (or any cooking oil) • Salt to taste • Fresh cilantro (for garnish) • • Instructions: • 1. Prepare the Squid: Clean and rinse the squid thoroughly. Cut it into rings and set aside. • • 2. Make the Coconut Mixture: In a mixing bowl, combine grated coconut, chopped onions, green chilies, turmeric powder, red chili powder, and salt. Mix well. • • 3. Cook the Squid: In a pan, heat 1 tablespoon of coconut oil over medium heat. Add the squid rings and a pinch of salt. Stir-fry for about 2-3 minutes until the squid begins to soften and release water. Remove from the pan and set aside. • • 4. Cook the Coconut Mixture: In the same pan, add the remaining tablespoon of coconut oil. Add the coconut mixture and stir well. Cook for 3-4 minutes on medium heat, stirring occasionally until the coconut starts to turn light golden. • • 5. Combine Squid and Coconut: Add the squid back into the pan. Mix everything well, and cook for another 2-3 minutes until the squid is fully cooked and coated with the spices. Avoid overcooking to keep the squid tender. • • 6. Garnish and Serve: Sprinkle black pepper powder for extra heat if desired, and adjust salt to taste.
