Grill or toast the bread. • Use your imagination and create your own recipes for tartine. • Goat Cheese and Radish with Micro Greens Tartine • Ingredients • A few thinly sliced radishes (daikon, watermelon, or whatever is in season) • soft fresh goat cheese, room temperature • micro greens • evoo for drizzling • Coarse sea salt and pepper to taste • Instructions • Top the prepared toasts with the goat cheese, radishes, and micro greens, Drizzle with olive oil, sprinkle with salt and pepper and serve! Enjoy! • Steak and Caramelized Onions with Horseradish sauce Tartine • Ingredients • 1 steak (about 1 in. thick) • Whole garlic • freshly ground black pepper and salt • caramelized onions • baby arugula • chopped rosemary • Instructions • Prepare the horseradish sauce (see below). Cut the steak across the grain into thin slices. Rub toasted bread with the garlic (I missed this step but well worth doing). Spread horseradish sauce on each toast slice. Top evenly with steak, onions and arugula, sprinkle with rosemary then drizzle evenly with evoo. Enjoy! • Ingredients for Horseradish Sauce • 1/2 cup sour cream • 2 Tbsp prepared horseradish drained • 2 Tbsp mayo • 1 tsp apple cider vinegar • 1/4 tsp salt • 1/8 tsp black pepper • 1 Tbsp chives finely chopped • Instructions for Horseradish Sauce • In a small mixing bowl, stir all of the ingredients together. Serve right away or cover and refrigerate for about 2 weeks. Enjoy! • Herbed Cream Cheese, Smoked Salmon, Egg and Caper Tartine • Ingredients • Smoked salmon • Herbed cream cheese (recipe below) • 1 hard boiled egg sliced • Capers • Green onion sliced thinly • Salt and pepper to taste • Instructions • Spread the herbed cream cheese (recipe below) on the toast. Top with smoked salmon and sliced egg. Sprinkle capers and green onions on top. Enjoy! • Herbed Cream Cheese • Ingredients • 1/4 cup cream cheese, at room temperature • finely chopped fresh basil leaves • finely chopped fresh chives • finely chopped Thyme • finely chopped fresh flat-leaf parsley leaves • Instructions • Combine all ingredients in a mixing bowl and blend with a wooden spoon until the herbs are evenly incorporated. Enjoy! • • How to Caramelize Onions (It's a process but well worth the trouble) • Several medium or large onions sliced • 1 tsp per onion EVOO • 1 tsp per onion Butter • Salt • Sugar (optional) • Balsamic vinegar or wine (optional) • Heat olive oil and butter in a large saute pan, add onion slices. Stir to coat the onions with the oil. Spread the onions out evenly over the pan and let cook, stirring occasionally.. After 10 minutes, you can sprinkle some salt over the onions You can add about a tsp of sugar per onion this is not necessary but it can help with the process. If you find the onions drying out you can add a little water to the pan. Let cook for 30 minutes to an hour more, stirring every few minutes. As soon as the onions start sticking to the pan, let them stick a little and brown, but then stir them before they burn.. After the first 20 to 30 minutes you may want to lower the temperature a little. Scrape up the browned bits from the bottom of the pan as the caramelization proceeds. Continue to cook and scrape, cook and scrape, until the onions are a rich, browned colour. At the end of the cooking process you might want to add a little balsamic vinegar or wine to help deglaze the pan and bring some additional flavour to the onions. Store refrigerated for several days in an air-tight container. Enjoy!
