Hey! Here is another vegan cheesecake, this time with blueberries! Classic vegan cheesecake - as usual it is super easy to make, delicious, no bake and gluten free. Yum! • For base: • Blend 180 g dates and 150 g nut butter of choice. Place and press down in a 8 inch cake tin. • Filling: • Blend 200 g soaked cashews, 150 g full fat coconut milk, 100 g melted coconut oil, 100 maple syrup, juice and zest from 1 lime, 1 tsp vanilla extract. Mix in approx 150 g fresh blueberries. Pour filling on the base of the cake, even it out and place in the fridge for at least 4 hours.
