Chili Jambalaya

Chili jambalaya • Inspired by Justin Wilson • Hymel’s Kajun Kitchen recipe • Ingredients • 1 lb ground deer or beef meat • 1 lb smoked deer sausage • 1 tablespoon veg oil • 2 teaspoons chili powder • 2 small chopped yellow onions • 1 chopped green bell pepper • 2 stalks of celery • 1 tablespoon cajun power garlic sauce • 1 teaspoon paprika • 1 teaspoon salt • 1 (28 ounce) can Tomato sauce • Cajun Seasoning • 1 (10 ounce) can Rotel • 12oz can of Budweiser NA • 2 cups Parish Rice • Instructions • 1. Heat oil in a large saucepan over medium-high heat. Add ground deer, sausage, and 1 teaspoon chili powder; cook 5 to 7 minutes or until deer is light brown. Remove meat mixture from saucepan; set aside. • 2.Add yellow onion, pepper, and celery ; cook 5 minutes or until tender, stirring occasionally. Add garlic sauce, paprika, salt, and remaining 1 teaspoon chili powder; cook 1 to 2 minutes. • 3.Return cooked meat mixture to saucepan; stir in tomato sauce, beer, and undrained rotel. Bring to a boil. Reduce heat and simmer 10 minutes or until mixture is hot. Add in 2 cups of parish rice then cover and let simmer for 30-40 mins flipping rice evenly after 20mins.
