Space is tight in the convenience store: At just 51.5cm or 20” wide, the mini is flexible enough to meet all your needs. • Its compact size does not put a limit on the mini’s capabilities or capacity – as a fully-fledged combi oven you can roast, grill fry or steam to produce the highest quality foods quickly and efficiently. In this video will show you how easy it is to produce high quantities: 84 bread rolls, 16 half chickens, full tray lasagne, 44 schnitzels and 5kg of potato wedges! • We start by demonstrating Press Go, automatic cooking, one of our key Production Management features. Simply select the right profile from the preset profiles on the icon-driven display to deliver consistent results. Press Go is easy-to-operate and removes the need to select time, temperatures and cooking mode. • Discover BakePro, one of our Quality Management features. This program enables you to cook straight from the fridge or freezer, reducing thaw time from 30 mins to 3.5 mins! BakePro releases water onto the surface of the product, resulting in even shine and color to give rolls that remain fresh throughout the day. • High volume cooking at the start of the trading period frees up the oven for the rest of the day. • Next we move to the hot counter and our chefs demonstrate how Press Go makes it quick and easy to cook two racks or 16 full chickens that are both juicy on the inside and crispy on the outside. For this we use a couple of accessories: the chicken grill rack ensures even airflow and the dripping tray captures juices and keeps the oven clean. • Press Go uses combi steam to give you faster cooking times, and keep the birds moist and juicy on the inside. Then it automatically activates Crisp Tasty, one of our Climate Management functions, to make it crispy on the outside. Chickens can then be transferred to hot holding where they will stay fresher for longer. • Crisp Tasty, available in three levels, uses high temperatures and automatic rapid dehumidifcation to create greater crispiness and more flavour. This avoids overcooking and extends the life of the product in holding. • See how TrayView provides an overview of the free capacity of the oven, the cooking status of the food on each shelf and allows for mixed loads, meaning you don’t need to worry about what’s happening in the oven and can focus on serving customers. At-a-glance you can work out how to use your oven to maximum capability. • We use the final shelf available to cook a lasagne in 1/1 GN, cooked to perfection with beautiful gratination of the cheese. • Next we explain how KitchenConnect® our open cloud-based network solution can help you to monitor, update and control all your equipment in various locations, from anywhere and in real time. Importantly, the menu development team has remote access to push out new options. HACCP and service information can also be shared. • Our chefs demonstrate grilling and frying, using specialist accessories to create an authentic finish for a typical German snack-to-go, schnitzel with potato wedges. The Crisp Tasty basket allows for airflow around the wedges for that just-fried look and feel, whilst the roasting tin captures any fat residue. With a full load, that’s 44 schnitzels and 5kg of potato wedges cooked to perfection in just 14 minutes. • Finally we show how you can prolong the life of your oven and maximize food safety by demonstrating how easy it is to clean your mini, using ConvoClean, our fully automated cleaning program that is available in three levels.
