I have been looking forward to making an all grain Irish whisky for a long time! So today we are mashing in and getting the process started! • Connemara's peated Irish whisky is the inspiration for this recipe although I am not really going for a clone here. • I will be using: • 20kg distillers malt • 20kg steam flaked barley • 9kg peated malt • 4kg Oats • 1.5 kg Dark chocolate • I think that should give me plenty of enzymes to ensure conversion with the overnight mash.
