Appetizer Recipe Salmon Ceviche Wholly Guacamole

Love Ceviche? Well, watch this short video to see how Chef Nathan Lippy takes Ceviche to the next level using fresh citrus, salmon and Wholly Guacamole Avocado Verde. FULL recipe: • • INGREDIENTS: • 1 pound fresh salmon, boneless and skinless, diced • The juice of 1/2 grapefruit • The juice of 2 limes • The juice of 1 orange • 1/2 cup radishes, sliced • 1/2 cup alfalfa sprouts • 1 tablespoon lime zest • 1 bunch cilantro • 1 teaspoon minced garlic • 1 package Wholly Guacamole Avocado Verde dip • 1 sliced baguette, toasted • salt and pepper • 1/2 cup coconut oil • Olive oil • • INSTRUCTIONS • 1. Using a large mixing bowl, add the salmon, grapefruit juice, juice of 1 lime, orange juice, 3 tablespoons Wholly Guacamole Avocado Verde dip, a drizzle of olive oil and salt and pepper. Stir to evenly coat the salmon. Cover and place in the refrigerator for at least 15-20 minutes. • 2. In a food processor, add the cilantro, juice of 1 lime, garlic, coconut oil and salt and pepper to taste. Blend on high for 60 seconds and reserve on the side for garnish. • 3. Once your salmon has had a chance to marinate, remove it from the refrigerator. To plate, add a tablespoon of the salmon then layer a few slices of radish on the side with a pinch of sprouts. Repeat the process. Place a couple of pieces of toasted baguette on the side and drizzle the whole plate with the cilantro lime oil.
