Khichdi prepared with urad dal is going to provide you all the essential nutrients and the next-level comfort that you were craving for! • URAD DAL KHICHDI • Ingredients • ½ cup split black green gram with skin (chilkewali urad dal), soaked for 2 hours and drained • 5 tbsps ghee + to drizzle • 1 tbsp cumin seeds • 2 tsps chopped ginger • 1 green chilli, chopped • ½ tsp asafoetida (hing) • ½ cup rice, soaked for 15 minutes and drained • A pinch of turmeric powder • Salt to taste • Method • 1. Heat 3 tbsps ghee in a pressure cooker. Add cumin seeds and once they start to change the colour, add ginger, green chilli, asafoetida and sauté for 1 minute. • 2. Add rice, urad dal, turmeric powder, salt and mix well. • 3. Add 3½ cups water and mix well. Cover with the lid and cook on medium heat till 4-5 whistles are released. • 4. Open the lid once the pressure settles completely. Mix well. Add remaining ghee, ¼ cup water and mix well. Cook for 2-3 minutes more. • 5.
