A quick recipe for delicious dumplings with meat. Delicious dumplings with meat. Thin dumpling dough with lots of meat filling. For their preparation, I use beef from beef broth. • Ingredients for approx. 70 pieces: • Stuffing: • approx. 700 g of boneless beef prepared according to the recipe: Beef broth • 2 medium onions • salt pepper • approx. 2 tablespoons of frying oil • Dumpling dough: • 500 g of wheat flour • approx. 300 ml of hot, boiled water • 1 flat tablespoon of salt • Recipe: • Boil the beef broth according to the recipe: Beef broth . • Peel the onions and dice them into thick cubes. Fry in oil. • Boiled and cooled broth meat and onions with the oil on which they were grinded. (Pass through a meat grinder or grind in a blender, for me thermomix). Add enough beef stock so that the stuffing is not dry. Season well with salt and pepper to give the filling a distinct flavor. (You can grind the cooked vegetables from the broth with meat. The stuffing will be richer. Then you may not need to add the broth. I usually don't add vegetables to keep them in the broth. I cook the pasta and we have a delicious beef broth). • Prepare the dough. Pour the flour into a bowl. Add salt and stir. Gradually pour hot water from the kettle (the warmer, the better the dough will be, more elastic, but not boiling water, so as not to burn yourself) and knead a uniform, elastic, soft dough. The dough should not stick. (If the dough is well kneaded, air bubbles should be visible in the cross section). • Divide the dough into parts. Roll out the dough very thinly on a floured worktop. (When rolling out one portion of the dough, put the rest into a bowl and cover it with a cloth so that it does not dry out). • Cut circles out of the rolled out dough, e.g. with a glass. Place the filling in the middle with a spoon, fold the dough in half and stick the edges together well. Place the ready-made dumplings on a floured board or countertop and cover with a cloth to prevent them from drying out. Prepare whole dough dumplings in this way. • Dumplings can be frozen or cooked and served right away. (Read about freezing dumplings in the notes). • Put the dumplings in boiling water and cook, on low power, in salted water for about 2 minutes after departure. After throwing the dumplings into the water, stir gently with a wooden spoon so that they do not stick to the bottom of the pot. • Remove with a slotted spoon. Serve with fried onion in oil or butter.
