Hey y'all! I'm going to post a bit early this week because here in America, we celebrate Thanksgiving and I wanted to get one last fall/Thanksgiving recipe out before the Christmas season. Y'all I'm trying so hard to stay caught up with the holidays and with me being in my last weeks of pregnancy, it's been a challenge. Anyways, if you love sweet pumpkin anything, this recipe is money! Perfect for chilly mornings with some tea or coffee or to have for breakfast on Thanksgiving. In a small bowl, add yogurt, pumpkin puree, oil and egg and whisk until combined. Add the wet ingredient to the dry and combine, do not over mix. • Add half the batter to the prepared baking dish and then add half the streusel mixture onto of that. Add the rest of the batter and top off with the remaining streusel. • Bake 35-40 minutes or until a toothpick inserted in the center comes out clean. Allow to cool. • In a small bowl combine powdered sugar and maple syrup and drizzle on top of cake. Enjoy! • • #thanksgivingrecipe • #pumpkin • #coffeecake
