In this video, we use the Chemex to make coffee for 2 people. • Steps: • Preheat your water and grind 55 grams of coffee to a coarse/medium coarseness. • Place the filter in the Chemex and rinse with hot water, then discard the water. • Take a straw or chopstick, or even the handle part of a spoon/fork. Insert into the middle of the grounds and push down, then rotate in circles a few times. This ensures an even bloom and extraction. • Start your timer and pour enough water to saturate everything, then swirl. • After 15 seconds, pour to 260 grams of total water. • Around the 1 minute mark, pour to 520 grams of total water. • Once water gets to the top of the Chemex, stop pouring and give the water time to drain out. • at 2:30, pour your final addition of water, for a total of 780 grams. • Wait for all for all of the water drain, which should take 5-5:30 minutes. • Enjoy! • www.protagonistcoffeeroasters.com
