Hot smoked salmon is an absolute delicacy. In our hometown Spakenburg (The Netherlands) this is made a lot. But how can you smoke a salmon to perfection on the BBQ? In this video we show you how to do this! • Summary • 1. Season the salmon with some (lemon)pepper • 2. Prepare your grill to smoke with a temperature around 100°C • 3. Put a chunck of smoking wood on the charcoal and put the salmon on the 'indirect' side of the BBQ (away from the direct heat) • 4. Smoke the salmon to a core temperature of 50-52°C • 5. Swipe the meat of the skin with a spoon • 6.
