INGREDIENTS: • Carrot cake • 1 and 1/2 cups of cream cheese frosting • White candy melts • Any color of candy melts to decorate • Lollipop sticks • Food coloring • Empty Egg shells • CARROT CAKE AND CREAM CHEESE FROSTING RECIPE: •    • Carrot Cake   • • INSTRUCTIONS: • 1. Bake a carrot cake but save 1/2 cup of batter for later. Crumble it in a bowl and add the cream cheese frosting and mix it all together. • 2. Form egg shaped cake balls and freeze for 10 minutes. Melt white candy melts , and coat the egg shaped cake balls and let them set completely. • 3. Melt different color candy melts and put them in piping bags with writing piping tips to decorate the eggs. You can buy colored candy melts but you will just use a little bit of them from the bag, so another option (what i did) is to color the white candy melts with gel food colorings . The candy melts will dry out because the food coloring has water in it, so add vegetable oil to the candy melts to thin it out. • 4. Decorate the cake eggs however you like. • 5. Make a hole in the bottom of a few eggs and empty them. You can do this before you bake the carrot cake, that way you use the eggs in the batter, if not just save them for later. Rinse the egg shells really well and then sink them in cups filled with water and food coloring of you choice. Let them sink there for 5 minutes. Then take them out and let them dry completely in a paper towel. • 6. Coat the inside with vegetable oil . In a cupcake tin, make foil nests so the eggs don't move while baking. Bake for 10-15 minutes at 350 degrees fahrenheit When they are completely cooled , gently remove the excess cake from the shells with a small knife. • 7. Place the eggs in a basket filled with easter grass , or individually in small baskets.
