[RECIPE IN THIS DESCRIPTION] Clean Keto Donner Kebab. • The Keto Kitchen is back! • Enjoy an in-depth recipe tutorial tributing a little man who was very special to us and an explanation on where I've been for almost 2 months. • Here's the recipe if you want to enjoy a donner kebab too, regardless of your keto preferences. • | The Recipe | • KEBAB INGREDIENTS: • 1kg/2lbs Ground Lamb (with the highest fat content you can buy) • 1 tsp Dried Oregano • 2 tsp Ground Cumin • 2 tsp Dried Coriander • 1/2 tsp Cinnamon • 3 tsp Salt • 1 tsp Pepper • 1 Small Onion, diced • 200g/7oz Unsmoked Bacon, diced • 2 Garlic Cloves, minced • MAYO: •    • EASY Mayonnaise || The Keto Kitchen   • FATHEAD (FOR ONE): • 50g Shredded Mozzarella • 25g Almond Flour • -OPTIONAL: Coconut Flour, for dusting • SALAD: • 200g Iceberg Lettuce, shredded • 1 Onion • 1 Large Tomato • • KEBAB METHOD: • 1. Start by preparing your lamb 4-24 hours before you want to cook it. In a large bowl add ground lamb, oregano, cumin, coriander, cinnamon, salt and pepper. Knead with your hands until well combined. Cover with film and place in the fridge to marinate. • 2. Preheat oven to 170c/325f. Make sure you have the needed equipment - a baking/roasting dish, metal skewers that are long enough to balance on the dish, foil to wrap the kebab and a blender. • 3. To your blender, add the bacon, diced onion and garlic cloves. Blend until you have a paste. If your blender is big enough, add the marinated lamb and blend again, scraping down the sides as needed, until you have a uniform meat paste. • If your blender isn’t big enough, remove the bacon paste from the blender and place in a large bowl. Then blend the lamb into a paste in batches, adding to the bowl with the bacon paste. Wet your hands and knead the meat pastes together until well combined. • 4. Turn the meat onto a clean work surface, wet your hands and shape into a large log that is NO LONGER than your metal skewers. Place the meat log on foil and roll tightly 2-3 times, twisting the edges of the tin foil and folding them up. • 5. Thread the metal skewers through the wrapped log and balance it on your baking/roasting dish. • 6. Cook for 1 hour 30 minutes, turning after 1 hour. The kebab meat needs to reach 70c/175f to be cooked. • 7. Increase the oven temperature to 250c/480f OR as high as your oven will go. • 8. Remove the foil from the kebab meat, leaving the skewers in. Place back in the oven for 15 minutes, turning halfway through, to brown the meat all over. • 9. Stand the meat upright and shave into thin slices. Then place the meat in a large frying pan with oil, over low-medium heat, cooking until it has browned slightly but is still floppy. • FATHEAD METHOD: • 1. Add the mozzarella to a microwave safe bowl. Microwave on high for 1 minute, or until you have a fondue-like consistency. • 2. Add the almond flour and knead until you have a uniform dough. OPTIONAL, dust with coconut flour. • 3. Press the dough into the pan that will cook it, shaping it into a disc. Remove from the pan and set aside. • 4. Place the pan on low heat, add a little bit of oil and then add your fathead dough. Cook until lightly browned on one side, flip and brown the other side. Remove from the pan. • SALAD METHOD: • 1. Prepare your salad by shredding the lettuce, slicing the tomato and preparing the onion: slice the onion thinly and add to a bowl of cold water, leave for 15 minutes.
