Pork kidneys • Here is the recipe in detail: • For 4 people • TOTAL TIME: 25 mins • Preparation: 10 mins • Cooking time: 15 mins • Ingredients : • 750 g Pork kidneys cut into pieces • 50 g Butter • 20 cl Tomato coulis • 2 tbsp. Old-fashioned mustard • 1 tbsp. hot mustard • 5 cl Cognac • Fresh parsley sprigs (a little) • Salt • Pepper • Step 1: Reduce the tomato coulis by half in a saucepan (around 8 min), add 1 tbsp. tablespoons of whole-grain mustard and hot mustard. • Step 2: In the meantime, sear the kidneys for 2 minutes over high heat in half the butter in a pan. • Step 3: Drain them and start again with the rest of the butter. Salt and pepper then remove them. • Deglaze with cognac.
