The combination of sweet and tangy spice and crackly crispness is addictive in this crunchy shrimp roll recipe. • Full recipe: https://www.cozymeal.com/recipes/r/cr... • Ingredients • Servings: 6 • For the Spicy Sweet Chili Sauce • ½ cup unseasoned rice vinegar • ½ cup water plus 1 tablespoon, divided • ½ cup granulated sugar • 2 large garlic cloves, minced • 2 tablespoons sambal oelek • 1 tablespoon soy sauce • ½ teaspoon crushed red pepper flakes • ½ tablespoon cornstarch • For the Crispy Shrimp Roll • 1 batch of spicy sweet chili sauce, see above • 1 teaspoon garlic powder • 1 teaspoon onion powder • 1 teaspoon black pepper • ½ teaspoon salt • 1½ lbs large shrimp, shelled and deveined • 1 tablespoon cornstarch • 2 tablespoons water • 12 sheets square spring roll wrappers, sliced in half • oil, for frying • finely chopped parsley or cilantro, for garnish • Directions 13 Steps | 40 Minutes • Instructions: • Step 1 • Prepare the spicy sweet chili sauce. In a small saucepan, combine the unseasoned rice vinegar, ½ cup of water, granulated sugar, minced garlic, sambal oelek, soy sauce and crushed red pepper flakes. • Step 2 • Bring the spicy sweet chili sauce to a boil and stir constantly until the sugar dissolves. Lower the heat to a simmer. • Step 3 • Prepare the cornstarch slurry. In a small bowl combine the cornstarch and the remaining one tablespoon of water. Stir until combined. • Step 4 • Add the cornstarch slurry to the sauce and stir until the sauce is thickened and glossy. Taste and adjust seasoning, if desired. • Step 5 • Prepare the crunchy shrimp roll. In a large bowl, combine the garlic powder, onion powder, black pepper and salt. Set aside. • Step 6 • Flatten the shrimp. Make three to four shallow cuts on the inner curve of the shrimp. Straighten the shrimp by flattening the shrimp with your fingers. Repeat with the remaining shrimp. • Step 7 • Add the straightened shrimp into the bowl with the garlic powder mixture. Toss to combine. Set aside. • Step 8 • In a small bowl, whisk together the cornstarch and water. Set aside. • Step 9 • Wrap the crunchy shrimp roll. Place one shrimp on one end of the spring roll wrapper. Cover the remaining spring roll wrappers with a damp cloth or paper towel while you work. • Step 10 • Roll the shrimp in the spring roll wrapper three to four times. Trim the leftover wrapper with a paring knife. Use a finger or a small basting brush to brush the cornstarch mixture and seal the shrimp roll. Cover with a damp cloth or paper towel. Repeat with the remaining shrimp. • Step 11 • Fill a heavy-bottomed pot with three to four inches of oil. Heat over medium-high heat until 350°F. Line a sheet pan with a wire rack. Fry the shrimp in batches until golden brown, about 8-9 minutes. • Step 12 • Drain the crunchy shrimp roll on the prepared wire rack. • Step 13 • Garnish the crunch shrimp roll with parsley or cilantro. Serve with the spicy sweet chili sauce.
