But it’s also a doddle to make at home when you have a little more time. • Ingredients • 300g dried macaroni (or other small pasta shapes) • Low-calorie cooking spray • 2 large cauliflowers, 1 grated, 1 broken into florets • 1 large onion, diced • 4 garlic cloves, crushed • 400ml hot vegetable stock • 120g extra-mature Cheddar cheese, grated • 250g plain quark • 4 tbsp fat-free natural yogurt • Cook the pasta according to the pack instructions, then drain well and keep warm. • At the same time, spray a large non-stick saucepan with low-calorie cooking spray and put it over a medium heat. Add the grated cauliflower, onion and garlic and cook for 10 minutes, adding a splash of water if anything starts to stick. Pour the stock into the saucepan, bring to the boil, then reduce the heat to low and simmer for 10 minutes. • Blend the cauliflower and stock mixture to make a smooth sauce. Remove from the heat, stir in half of the cheese and leave to cool for 10 minutes before stirring through the quark and yogurt. • While the sauce is cooling, cook the cauliflower florets in a saucepan of boiling water for 4 minutes, then drain and keep warm. • Preheat your grill to high. • Tip the pasta into a large overproof dish (that will fit under your grill) and spread it out evenly. Arrange the cauliflower florets on top, then pour over the sauce and top with the rest of the cheese.
