Spice cake with white cake mix and cream cheese frosting is easy and delicious. By adding spices to a regular box mix, you can create one of the best fall and Thanksgiving dessert recipes. • This recipe started as a cookie recipe. About two years ago, I divided a box of white cake mix into four equal parts and then added mix-ins in order to create different flavors. I had already made lemon, chocolate, and red velvet, and then the idea came to me to make spice cake cookies. I rummaged through my spice cabinet to see what I had on hand, and even though I did not allspice or cloves, I did have cinnamon, nutmeg, and ginger. Not really sure what to expect, I sprinkled in what I thought was probably about 1/4-1/2 teaspoon of each spice, curious as to how the cookies would turn out. I ended up really liking them, especially with a simple sugar glaze. So, when the thought came to me this fall to do an easy spice cake recipe video, I thought back to my cookies: instead of doing a traditional spice cake with four or five spices and brown sugar, I decided to use the spice cake cookie recipe that I had invented for Christmas. • Like I just said, most traditional spice cake recipes call for a lot of spices, usually cinnamon, nutmeg, ginger, allspice, and cloves, along with brown sugar for the extra bit of flavor from the molasses. Although I am sure the classic recipe is great, sometimes I think that combining fewer flavors is better because then you can focus your attention on a few tastes.
