Try making this Odia Kakara Pitha recipe – simple, and sure to delight your taste buds. • Ingredients required: • For Outer Covering • Sooji/Semolina - ½ cup • Ghee/Oil - 1 tsp • Fennel Seeds - ½ tsp • Salt - ¼ tsp • Water - 1 cup • For Coconut Filling • Grated Fresh Coconut - ½ cup • Jaggery Powder - ¼ cup • Cardamom Powder - ¼ tsp • Black Pepper - ¼ tsp • Finely Chopped Almonds Cashew - 2 tbsp • Raisins - 1-2 tbsp • Oil for Frying • How to make Kakara Pitha: • 1. In a pan, heat a cup of water. Add salt and ghee and sugar. • 2. Once the water starts boiling, add sooji/semolina. Keep on stirring so that no lumps are formed. • 3. Once the mixture is thick, switch off the gas and take it out in a separate bowl to cool. • 4. Once the mixture is workable, not completely cool, knead the mixture for 5 mins to get a soft dough, cover and keep aside. • 5. In another non-stick pan, add fresh grated coconut and cardamom powder. Sauté it a little till it starts giving the roasted aroma. • 6. Add jaggery powder/sugar, and cook till jaggery/sugar completely melts. • 7. Now add chopped nuts and raisins. Cook for 1-2 minutes. Keep on stirring the coconut and nuts mixture.Once done, transfer in a bowl and keep it cool. • 8. Now take the smooth sooji dough and divide it in equal portions. Keep a small ½ ball to check if the oil is ready for frying. • 9. Now take one ball and flatten on the palm to make 3 diameter disc. • 10. Keep about 1 tsp of filling on the disc, and fold the edges to seal the disc. • 11. Lightly press the ball and flatten it to make a disc. Ensure there are no cracks or openings, else the filling with come out. • 12. Make all the Pithas in the same way, keep covered. • 13. In a kadhai or heavy bottomed pan, heat oil. • 14. Drop the small ball that we made in step 1 of making pitha. It should sizzle and rise up. • 15. If the ball rises immediately lower the flame and cool the oil a bit. If the ball doesn't sizzle and rises very slowly, heat oil a bit more. • 16. Now drop 2-3 pithas in hot oil and fry till golden brown from both the sides. Lightly flip the pithas.While frying keep the flame to medium. • 17. Take out a plate lined with a kitchen towel. It absorbs extra oil. • 18.
