Rice salad • Here is the recipe in detail: • For 4 people • TOTAL TIME: 30 mins • Preparation: 20 mins • Cooking time: 10 mins • Ingredients : • 250 g Rice • 80 g Parmesan • 50 g Arugula • Tomatoes preserved in oil: 8 • 30 g Pine nuts • For the vinaigrette: • Olive oil: 6 tbsp. soup • 1 Tbsp Wine vinegar • 2 Tbsp Hot mustard • Salt • Pepper • Step 1: Cook the rice in a large volume of boiling salted water according to the instructions. • Refresh and let drain in a colander. • Step 2: Grate the parmesan into shavings. • Drain the tomatoes and cut them into pieces. • Step 3: Rinse and drain the arugula. • Brown the pine nuts in a non-stick pan. • Step 4: Mix all these ingredients with the cooled rice. • In a bowl, mix the vinegar, mustard and olive oil. Salt, pepper. • Step 5: Pour this vinaigrette over the rice salad. Stir well.
