I love pies made with summer fruit, especially pie fruit — by that I mean rhubarb! But when I'm too lazy to plan ahead, I don't want to be rolling out pie crust. That's when I bake a crumble or a crisp. You don't need to plan ahead. All you do is make the filling, mix together the topping, add the filling to a baking dish, and cover with the topping. Bake until bubbly and serve hot out of the oven with vanilla ice cream.
