If you are looking for an easy AIP breakfast on the go this Breakfast Burrito video is for you. • One of the ways I made AIP easier for me was to renovate recipes I already loved. Breakfast burritos were an easy grab and go meal before I went AIP. I hope my adventures will inspire yours:) • Contact me at: • Email: [email protected] • Mail: It's Aud#132-328 Wale Rd, Colwood, BC V9B0J8 Canada • Breakfast Burrito • 4-6 Burritos • 1 Large Sweet Potato, cubed • 1 Large Onion, sliced • 1 TBS Avocado Oil • 1lb Ground Pork • 1.5 TBS Breakfast Sausage Seasoning • 2 TBS Nutritional Yeast • 1 Cup Frozen Kale • Tortilla • • AIP Bread: Tortillas (Gluten Free, Gr... • 3/4 Cup Cassava Flour • 1/4 tsp Sea Salt • 2 TBS Oil • 1/3 Cup Warm Water • 1) Roast sweet potatoes and onion on 375F for 25-30 minutes until • golden and cooked though. • 2) While roasting sweet potatoes brown pork. • 3) Add seasonings and cook for 2-3 minutes. • 4) Add yeast and kale mix well. • 5) Add sweet potato mixture, mix well set aside. • Make tortillas: • 1) Whisk together cassava flour and salt. Add the oil and warm water • until a nice dough begins to form. The dough should not be dry or • too wet and sticky. • 2) Knead the dough until smooth. • 3) Divide into 4 dough balls. • 4) Roll each dough ball between two pieces of parchment paper until • thin or use a tortilla press. • 5) Heat skillet over medium high heat. Place tortilla in the • skillet. Wait for the air bubbles to form (approx. 1 minute) and • then flip.
