There are many variations of making the stuffing and even with different ingredients like paneer/cottage cheese, besan/gram flour and green peas etc. But here we are preparing stuffing with fresh coconut and peanut powder. A good option for tiffin or lunch box • Ingredients: • For stuffing – • • 3~4 big spoons grated fresh Coconut • • 2~3 spoons roasted peanut powder • • Red chili powder • • Ginger garlic paste • • Turmeric powder • • Garam masala • • Coriander powder • • Salt to taste • • Sugar (Optional) • • Finely chopped Coriander leaves • For Sabji - • • 5 – 6 small simla mirachi / Green bell pepper • • Oil • • 1/4 cup Water • Method: • For Stuffing: • • Take grated coconut in a mixing bowl. • • Add peanut powder, red chilli powder, ginger-garlic paste, • garam masala, turmeric powder, coriander powder, salt, sugar • (optional), coriander leaves. • • Mix well. Stuffing is ready. • For Sabji - • • Wash and dry the simla mirachi. Remove it's stock. • • Make a slit just below it to remove the seeds. Remove the • seeds. • • Fill the stuffing into the simla mirachi. • • Heat the pan on medium heat. Add oil. • • Put the pepper into the pan. • • Cover the pan with Cook on low heat for 8 – 10 minutes. • • After every 3 – 4 minutes take the lid off and the pepper over. • • After 10 minutes add the remaining stuffing in the oil in the • pan. Fry the stuffing for 4 – 5 minutes. • • Add water. Coat the pepper in the stuffing. • • Cover the pan with the lid and cook for another 3 – 4 minutes. • • Your stuffed simla mirachi is already. It goes well with • chapatti or fulaka. Goes well with rice too. • • You can also bake the pepper on 3500 F for 15 -50 minutes.
