Today we are making vegan pancakes that are gluten free and soooo good! These pancakes are fast to make, delicious, and also healthy. • Looking for more yummy breakfast recipes? • Breakfast Recipes • ★ Come cook with me ★ • ★ SUBSCRIBE to my channel - https://goo.gl/H6VaDn • 1 teaspoon Coconut Oil • 1 cup Buckwheat Flour • ½ cup Tapioca Flour • 1 cup Almond Milk (unsweetened) • 1 tablespoon Vanilla Extract • ½ teaspoon Pink Salt • 1 tablespoon Monkfruit Extract • 1 teaspoon Baking Powder • ½ teaspoon Baking Powder • 1 tablespoon Apple Cider Vinegar • 1 tablespoons Ground Flax + 3 tablespoons Filtered Water • Cream Cheese Topping: • 2 tablespoons Cream Cheese • 2 tablespoons Plant Milk • 1 tablespoon Monkfruit Extract • 1 tablespoon Vanilla • Combine flax and water in a small bowl and set aside for 5 minutes. Combine plant milk apple cider vinegar in a bowl and let stand for 5 minutes. In a large bowl combine all the dry ingredients and mix with a whisk. Add the wet ingredients flax egg. Whisk until just combined well. In a large frying pan, heat coconut oil. Add 1/4 cup pancake mixture to the pan. Cook for 1-2 minutes, flip over. Cook for an additional 1-2 minutes. Remove from pan and continue until all pancakes are done. Combine cream cheese topping ingredients in a medium bowl and whisk until the perfect consistency. Plate up a few pancakes and drizzle the cream cheese topping on top. Top with maple syrup and some cinnamon.
