It is made with capers and red onion and is great as a light meal or an appetizer. • A ceviche is a fish or seafood meal that is 'cooked' in citrus, most typically lemon and lime. I like adding an orange to my ceviches in order to balance the acidity of the lemons. • Ceviches are low in fat, low in calories, low in carbs and very refreshing. You will need to let the fish marinate in the citrus for a minimum of two hours. • Serves eight • 3 pounds salmon fillet • 3 tablespoons capers • 1 small red onion, thinly sliced • 3 large lemons • 1 small orange • Salt • Carefully skin the salmon. Rinse and pat dry it well. Using a very sharp knife cut the fish into medium sized cubes. • Place the fish into a glass bowl and add the capers and onions. • Juice the lemons and the orange and generously season the juice with salt. Go ahead and taste the juice to make sure you have enough salt. You don't want ocean water salty but you do want a good balance of salt and acid. Pour the juice over the fish and carefully mix everything • together. • Cover the bowl and place in refrigerator for a minimum of two hours. • Serve the ceviche on a bed of lettuce and eat within two days! Enjoy! • • CALORIES 242.36; FAT 7.80 grs (sat 1.86; mono 2.81; poly 2.32); PROTEIN 38.71 grs ; FIBER 0.60 grs; CARBS 4.70 grs; CHOLESTEROL 85.05 mg; IRON 0.77 mg; SODIUM 858.53 mg; CALCIUM 25.70 mg • Print your recipe here - http://thefrugalchef.com/2010/06/salm...
