Stuffed Pepper Soup -- Calvin's Southern Recipe • Stuffed Pepper Soup • INGREDIENTS • • 1 lb ground beef • • 1 green bell pepper, chopped • • 1 red bell pepper, chopped • • 1 large onion, chopped • • 4 oz. mushrooms, chopped • • 1 can(15 oz.) beef broth • • 1 can (15 oz) tomato sauce • • 1 can (15 oz.) petite diced tomatoes, undrained • • 3 - 4 shakes of Worcestershire sauce • • 1 tsp Italian seasoning • • 3 tbsp minced garlic • • ½ tsp black pepper • • ½ tsp salt • • ¼ tsp red pepper flakes • • 3 cups cooked rice • • Mozzarella cheese for topping (Optional) • INSTRUCTIONS • 1. In a large skillet, brown and crumble the beef with the peppers and onions until the beef is no longer pink. • 2. Add the garlic and sauté for at least 30 seconds • 3. Drain the excess grease • 4. Add meat , peppers and onions to the crockpot • 5. Stir in the mushrooms, broth, tomato sauce, tomatoes, Italian seasoning, salt, black pepper, red pepper flakes and Worcestershire sauce. • 6. Cook on high for 2 – 3 hours or low for 4-6 hours. • 7. Add half of the cooked rice to the soup and stir • 8.
