Mutton red gravy recipe# • Ingredients: • 500g mutton (bone-in preferred) • 3 tablespoons mustard oil (or any cooking oil) • 2 onions, finely sliced • 2 tomatoes, finely chopped or pureed • 2 tablespoons ginger-garlic paste • 4-5 dried red chilies (soaked and made into a paste) • 1 tablespoon red chili powder (adjust as per spice level) • 1 teaspoon turmeric powder • 1 teaspoon cumin seeds • 1 teaspoon coriander powder • 1 bay leaf • 2-3 green cardamoms • 1-inch cinnamon stick • 4-5 cloves • Salt to taste • Fresh coriander leaves (for garnish) • 2 cups water or mutton stock • For Marination: • 2 tablespoons yogurt • 1 tablespoon ginger-garlic paste • 1 teaspoon red chili powder • 1 teaspoon garam masala • Salt to taste • Instructions: • 1. Marinate the Mutton: • In a bowl, mix yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. • Add the mutton pieces and coat them well. Let it marinate for at least 2 hours (preferably overnight in the fridge). • 2. Prepare the Red Chili Paste: • Soak the dried red chilies in hot water for about 15 minutes, then grind them into a fine paste. You can add a little water to make it smooth. • 3.
