Help with Headspace Canning Crushed Tomato Sauce

I have been getting a lot of questions about headspace, and many people struggling with getting their headspace perfect. So, I am going to share with you my tips while we can my home grown garden tomatoes together. This was a mixture of San Marzano, Big Boys and Cherry Tomatoes. I washed them, cored them, pulverized them in my Vitamix and slow cooked them in the slow cooker option in 2 10-quart Instant Pots for 36 hours.
