Flour Tortillas

Running to the store simply isn't an option when town is so far away, so I've learned how to make these easy, fabulous tortillas. • 3 cups flour • 1 tbsp salt • 6 tbsp lard • 1 cup hot water • Mix flour and salt. Cut in lard with a fork or pastry blender. Add the water and mix with a spoon. Once it's mostly mixed, dump onto a work surface and knead until the dough comes together. Knead for 8 minutes. Cut into pieces and roll into balls. One batch of dough will make about a dozen large tortillas or 24 small tortillas. At this point you can let them sit, covered with a moist towel for 20 minutes or immediately begin rolling them out. I roll them about 1/16th of an inch thick. Once they're all rolled out, begin frying them, about 30 seconds per side or until slightly golden. Immediately fill with filling or serve for tacos or allow to cool. Once cooled they can be stored in the fridge for several weeks or in the freezer. I have always put a piece of wax paper between tortillas when storing.
