This mushroom is a real treat and belongs to the Agaricus genus of mushrooms which is the same group that button mushrooms in the store belong to. Agaricus hold some of the tastiest, meaty mushrooms which can have aromas from liquorice to almond to yukky phenolic smells depending on the species. The Prince mushroom smells like licorice or marzipan and has a yellow staining reaction if you cut it (stem or cap margin). Be cautious, poisonous Amanita genus mushrooms can look a bit like this one, to learn more about how to safely find and identify wild mushrooms check out our online courses or our infield trips that happen in fall in Vancouver. www.swallowtail.ca • Follow Chef Robin online here: • Instagram: / swallowtailtours • Foraging online infield courses: https://www.swallowtail.ca/tours/mush... • Website Blog: http://www.swallowtail.ca • Email newsletter Free Foraging Series: https://awa3483.aweb.page/p/b290354a-...
