The measurements for this recipe aren’t carved in stone and can be altered slightly to suit your taste. • Thyme - 1 cup of freeze dried or dehydrated or 2-4 ounces fresh • Water – 1 quart • Honey – 1 cup • Combine the water and thyme in a medium pot and bring to simmer over medium heat. Continue simmering until the water is reduced to about half. This may take a little while but don’t rush it by increasing the heat to a boil. Boiling will reduce the benefits of the thyme.
