Roast Beef with Oatmeal Stout Gravy

ROAST BEEF with OATMEAL STOUT GRAVY 🏴󠁧󠁒󠁳󠁣󠁴󠁿 • Roast beef on a Sunday in our house meant Stovies for tea on a Monday…and that was one of my favourite dinners!!! I also can’t go by a roast beef sandwich so ALWAYS make extra for leftovers!!!! • Serves 3-4 for two dinners! • 2 rib standing roast (get your butcher to remove the bones, chop them in half then tie the rib eye up with string) approx 1.5kg of meat. • 2-3 large onions • 2 garlic cloves • 2 stalks celery • 3 carrots • 1 bay leaf • 500ml beef stock/bone broth • 2 cans Oatmeal Stout • 25g butter • Splash of sherry vinegar • 1 heaped tsp corn flour • Salt and pepper • First off get your bones drizzled in oil salt and browned in oven at 220c. Into pressure cooker sauté 1 onion, garlic, sliced celery, sliced carrot, bay leaf. Add your browned bones and strain the residual fat into a jar for later. Add the stock and the oatmeal stout. Pressure cook for 45 minutes. • In the tray you cooked your bones in, cut the remaining onion into thick slices and lay in tray as a trivet for the meat, drizzle on oil and salt, then do the same for the beef placing on top of the onions. I use a thermometer and set it to 60c for medium rare. Into the oven at 220c for 15 minutes, then turn down to 200 for remaining time. Mine took about 30 minutes. Take it out and move beef to board to rest. • Strain the pressure cooked stock into the oven tray and get onto the heat to get all the roasted meat juices. Then strain the onions out and reduce the gravy by about half. In your gravy jug, mix the cornflour into a slurry with water and pour some gravy into it and stir to mix, then back into the pot to thicken.
