#TBT My favourite pasta to eat and cook but more importantly Bae's favourite! Only takes a few high quality ingredients but it’s all about technique for that rich, glossy “creamy” pasta. • INGREDIENTS • Spaghetti (Rigatoni is also nice) • Guanciale (Cured Pork Cheek) • Pecorino Romano Cheese • Egg Yolks • Fresh Black Pepper • Salt • Water (Plus Starchy Water) • PREPARATION • Remove skin from Guanciale and cut into chunks. • Grind fresh black pepper. • Mix egg yolks with finely grated Pecorino Romano cheese. • Have all tools and ingredients ready. • COOK: • Boil water, and heavily salt. • Warm Guanciale in a cold pan until fat is rendered, then remove meat. • Cook pasta in boiling water • Cook pasta 2 minutes less than package instructions. • Saving a cup or more of starchy pasta water • EMULSION/FINISH: • Combine ingredients in the pan pasta first, pasta water then adding egg/pecorino mixture last • Mix thoroughly to create creamy sauce on low heat • Avoid scrambling eggs or lumpiness (too hot or not enough water) • Season with fresh pepper and top with reserved Guanciale for extra crunch • π₯ Guanciale @thebutchershoppe_to • π Noodles βͺ@barillaβ¬ @barillacanada • . • . • . • #Pasta #Spaghetti #Carbonara #Foodie #Foodies #ItalianFood
