Making CORN Cob Syrup at Home Taste like Maple Syrup

This is SOOOO GOOD! Wow. I'm still impressed days later. We started with about 25-30 cobs of sweet corn cobs. Put them in a stock pot and added enough water to cover them. Brought to a boil for a good 30 minutes, and then simmered for another hour. Pull out the cobs, and then strain the liquid with a tea cloth. Bring back to a boil and add about 5-6 cups of brown sugar. Keep boiling it down. Once you get about 1/2 way reduced, you'll start to notice fine bubbles forming. Once there, it's time to start checking the temp. You're shooting for 220F temp as your target. Once you've reached temp, remove from heat, place into pint jars. And water bath can for 10 minutes.
