Do you like cranberries as much as we do? You can do so much with them. Muffins, cranberry sauce, juices, and of course these amazing bars. Run out and get a few bags of cranberries for they will go away after the holidays. You can freeze them and then you can make these bars whenever you want to. They are so easy and simple to make, not to mention how delicious they are. And don't forget to watch for the special visitor. And, by the way, if you haven't yet, order your cookbook. It is delicious if I say so myself. 😉 • www.karenjonesfoodandfamily.com • Write us at: • Food Family • PO Box 675 • McCalla, AL 35111 • Amazon store: • https://www.amazon.com/shop/karenjone... • Rada Knives: • https://radakitchenstore.com/?rfsn=69... • Ingredients: • Crust: • 3 cups all purpose flour • 1 cup granulated sugar • 1 tsp baking powder • 1/4 tsp salt • 1 cup butter, cold, cubed • Filling: • 4 cups fresh or frozen cranberries • 1 cup granulated sugar • 1 Tbsp cornstarch • 1 tsp vanilla • 1 Tbsp orange juice • Preheat oven to 350 degrees. Spray 9 X 13 baking dish with non-stick cooking spray. Set aside. • In a medium bowl, combine flour, sugar, baking powder, and salt. Using a pastry blender, cut butter into the flour mixture. Set aside 1 1/2 cups of mixture. Press remaining mixture into the bottom of the prepared baking dish. Set aside. • In a large bowl, combine cranberries, sugar, cornstarch, vanilla, and orange juice. Spread evenly over crust. Using the remaining crust mixture, with your hands squeeze crumb into small clusters and drop evenly over cranberry mixture. • Bake 45-55 minutes or until bubbly and crust is golden. • Optional: • Glaze: • 2 cups powdered sugar • 1 tsp vanilla • 3-4 Tbsp orange juice • Stir together glaze mixture and drizzle over cooled bars. Cut into squares.
