Welcome back to my channel! Today, we're diving into a classic Lebanese comfort food: mujadara. This delicious lentil and rice dish is not only nutritious but also incredibly satisfying. Topped with caramelized onions, it's a perfect meal for any day. Let's get started! • Ingredients • Lentils: • 1 cup green or brown lentils, rinsed • 3 cups water • Rice: • 1/2 cup long-grain rice, rinsed and soaked for 20 minutes • 1 cup water • 1 teaspoon salt • Caramelized Onions: • 1 medium onion, diced and caramelized to mix with lentils • 2 large onions, thinly sliced and caramelized for topping • Spices: • 1 teaspoon ground cumin • 1 teaspoon ground coriander • 1/2 teaspoon ground allspice • 1/2 teaspoon black pepper • Salt • Instructions • 1. Cook the Lentils: • In a large pot, combine the lentils and 3 cups of water. Bring to a boil, then reduce the heat and simmer for about 20 minutes or until the lentils are tender but not mushy. • 2. Caramelize the Onions: • While the lentils are cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced medium onion. Fry, stirring occasionally, until the onion is golden brown and caramelized, about 15-20 minutes. Add them to the lentils. • In a bowl, toss the sliced onions with 1 tablespoon of flour until evenly coated. In the same skillet, add 2 tablespoons of olive oil. Add the coated sliced onions. Fry, stirring occasionally, until the onions are golden brown and caramelized, about 20-30 minutes. Remove from heat and set aside. • 3. Cook the Rice: • To the lentils add the rinsed and soaked rice, 1 cup of water, 1 teaspoon of salt and pepper. Cover, and simmer for about 15 minutes or until the rice is fully cooked. • 5. Serve: • Transfer the lentil and rice mixture to a serving dish.
