Breadmaking Feeding your Sourdough Starter

I have been baking bread for the past several years, using Ken Forkish's book Flour Water Salt Yeast and recipes from King Arthur Baking as a guide and have given away a fair number of loves of bread to friends and family. • (My recommended supplies and sources are listed below) • These friends and family want to know a bit more of the baking process, so I thought it best to start with Feeding your Sourdough Starter - since I have passed along my starter to several friends. It's pretty basic stuff from a definite amateur. Making the starter itself was a week-long process of daily discarding almost 80%, then feeding back the proportions of flour and water again until you had a healthy, yeasty starter (yes, the yeast comes from the air and flour). • I keep my starter in a plastic tub in the refrigerator and feed it each time I bake, somewhere between 1 and 2 weeks.
