Nicaraguan Tres Leches Cake is a simple sponge cake recipe that is soaked in 3 types of creamy milk - giving it the name Three Milk Cake! Topped with fresh whipped cream and cherries, this Nicaraguense Tres Leches is the perfect holiday dessert! • TRES LECHES • 1 1/2 cups cake flour • 1 teaspoon baking powder • 1/2 teaspoon kosher salt • 8 tablespoons unsalted butter • 1 cup sugar • 5 large eggs • 1 teaspoon vanilla extract • TRES LECHES GLAZE • 1 (12-ounce) can evaporated milk • 1 (14-ounce) can sweetened condensed milk • 1 cup half-and-half • WHIPPED TOPPING • 2 cups heavy cream • 1 cup sugar • 1 teaspoon vanilla extract • INSTRUCTIONS • Pre-heat oven to 350ºF. Whisk together the cake flour, baking powder, and salt in a medium mixing bowl and set aside. In another bowl, mix butter and sugar and until creamy. Add the eggs one at a time and mix to thoroughly combine. Next, add vanilla extract. • Once the wet batter is complete, add the dry ingredients to the batter in 3 batches and mix just until well combined. Spread the batter evenly in a greased and floured baking dish. It will appear to be a very small amount of batter. Don't worry, batter will expand. • Bake for 20- 25 minutes until lightly golden. Remove from oven and cool for 30 minutes. In the meantime, poke holes in the cooled cake and begin to prepare the tres leches glaze. Whisk together the evaporated milk, sweetened condensed milk, and half-and-half. Pour mixture over the cake and allow it to soak overnight or for a more than 3 hours. • While it soaks, make the topping. Pour cream, sugar, and vanilla in the bowl and whisk on low speed for 3 minutes. Gradually increase speed until cream is thickening. Whisk until cream forms soft peaks.
