Line a baking tray with parchment paper and set aside. • MAKING • In a large bowl, sift together flour, cocoa powder, baking soda, salt and baking powder. Set aside. • Using a stand mixer, beat together butter, sugar and vanilla, until creamy. • Add in the melted dark chocolate and mix well. • Stir in the flour mixture, but don’t over mix. • Using an ice cream scoop, place the mixture over the prepared baking sheet and bake for 10 – 12 minutes. • Take out the cookies and place over the cooling rack to cool. • Meanwhile, prepare the filling – in a bowl, stir together all the ingredients. • Spread some of the filling over one of the cookies and top with another cookie. Repeat the process with the rest of the ingredients. • SERVING • Serve the cookies to your kids with milk. • NOTES • To make these cookies little soft cakey, add 2 tbsp of yogurt or 1 tbsp sour cream to this same recipe.
